Tomato Soup Recipe with Soya Beans
If you like tomato soup but usually make it with cream, try this tomato soup recipe with mixed soya beans instead.
This is so much better for your waist line and you also get excellent protein.
Soya beans are one of the best sources of quality protein. (Of course you can use your favorite recipe and replace the cream and flour with mixed soya beans.)

Ingredients
1 onion 1-2 cloves of garlic (optional) 1 tablespoon of olive oil 0,5 liter of slightly concentrated tomato juice 0,5 liter of water 2 cubes of vegetable or chicken stock ½ tablespoon of dry Italian herbs (basil, thyme, oregano) 200 grams of cooked soya beans Herbal salt, pepper
Preparation
1. Finely chop the onion and the garlic. 2. Heat the oil in a large soup pot and cook the onion and the garlic until softened. 3. Add the tomato juice, the herbs, the water and stock cubes and bring to the boil. 4. Leave to simmer for about 10 minutes. 5. Mix the soya beans with some of the liquid in the blender and add them to the soup. (How finely mixed they become depends on the speed of your blender.) If you prefer the soup smooth you can mix all of the soup, just leave it to cool a bit before you add it to the blender. 6. Salt and pepper to taste. 7. Serve hot.
Grated parmesan cheese is yummy to sprinkle over the soup.
