Greek Spinach Pie Recipe with Cheese - Spanakotiropita
This is a spinach pie recipe with cheese for an excellent snack or starter, even suitable to take to the office.
The pie is made with leaf-thin fyllo pastry sheets, which you can find in stores that supply Mediterranean food.
A yummy combination of spinach and salty feta cheese.

Ingredients
2 pounds/1 kg fresh spinach 1 onion, finely chopped 4 tablespoons olive oil 1 cup cream sauce 6 eggs, beaten 1 cup/250 ml finely-crumbled feta cheese Salt and pepper to taste Dash of nutmeg 1/2 pound/250 grams of phyllo pastry sheets
Preparation
1. Wash the spinach thoroughly and discard stems. 2. Dry on absorbent paper and cut into pieces. 3. Sauté the onion in olive oil until soft. 4. Add the spinach and sauté a few minutes longer. 5. Leave to cool. 6. Add the eggs, feta cheese and seasoning. Mix everything well. 7. Place 7 layers of phyllo pastry sheets in an 11 x 14 x 2-inch/28x35x5 cm pan, brushing each sheet well with olive oil. 8. Add the spinach mixture, then place 8 phyllo pastry sheets on the filling, again brushing each sheet well with olive oil. Don’t forget the upper sheet. 9. Cut the upper layer into a grid, the squares in a size you prefer. 10. Sprinkle some water on top before putting the pan in the oven. 11. Bake at 350 degrees F/175 C for about 30 minutes, or until the crust is golden brown.
Cut the squares completely through the pie before serving.
