Onion Soup Recipe with Lentils
This is a variation of the classic French onion soup recipe that is traditionally served with bread croutons and cheese as toppings.
In this recipe the protein comes from green lentils.
Of course you can use whole meal bread croutons and low fat cheese if you want to make the original more weight loss friendly.
Lentils are an excellent source of protein, and adding more lentils and dry beans to your diet is an easy weight loss trick.

Ingredients
250 grams / 1/2 pound of onions 1/3 tablespoon oil, preferably olive oil ½ liter of vegetable or beef stock 1 bay leaf 2 teaspoon of thyme (as you prefer) 1.5 fl oz (5 cl) of green lentils 1 tablespoon chopped parsley (optional)
Preparation
1. Peel the onions, cut them in halves and slice them thin. 2. Check the lentils for small stones and rinse them under water and put them to the side. 3. Heat the oil in a nice size pot and add the onions. Lower the heat a bit so that the onions are cooking not burning until they are soft. 4. Add the stock, thyme and bay leaf. Bring to a boil covered by the lid. 5. Add the lentils and bring to a boil again. Cook on low heat covered by the lid for about 40 minutes until the lentils are soft. 6. Sprinkle with parsley before serving.
