Easy Green Bean Recipe
Greek Style – Fasolakia me Lathi
This green bean recipe is a healthy alternative for a yummy side dish to both meat and fish.
Using fresh beans is the best choice for this dish. Fresh beans need longer time for cooking leaving enough time for the tomatoes and onion to cook nicely into a sauce, but using frozen beans is a good alternative when you’re in a hurry.
Frozen beans only take about 10 minutes to cook and you don’t even have to cut them with a knife. They break easily by hand.
If you are used to just boil up some spaghetti or rice, try this recipe the next time.
Olive oil is the natural choice of fat for this dish.
4-5 servings Ingredients
2 1/2 lbs./1 kg Green Beans 1 cup/150 ml Olive Oil 1 clove Garlic 2 thinly sliced Onions 1 lb. chopped Tomatoes, or 1 can 3 tablespoons, chopped Parsley and pepper Salt 1 teaspoons Sugar
Preparation
1. Remove the ends of the green beans cut into 2 inch pieces. 2. Heat the oil in a saucepan. 3. Add the onions and the garlic and cook until soft. 4. Add the tomatoes, beans, parsley, salt, pepper and sugar. 5. Cover and cook over moderate heat for about 20-30 minutes. (If you use frozen beans, 10-15 minutes is enough.)
